GRILLED VEGGIE SKEWERS


INREDIENTS

- 1x cup red capsicum (diced)

- 1x cup mushroom (diced)

- 1x red onion (diced)

- 1x cup cherry tomato (diced)

- 1x cup zucchini (diced)


Garlic Herb Sauce


- 1/3 cup olive oil

- 3 garlic cloves crushed

- Fresh finely cut parsley

- 1/3 cup tamari sauce

- 1 pinch salt and pepper


METHOD


1. Soak approximately 8-12 medium sized wooden/bamboo skewers in water for at least 15-30 minutes.

2. Prepare the vegetables for the skewers. Roughly dice all vegetables and get ready for assembly.

3. Prepare the garlic herb sauce - in a medium bowl whisk together the olive oil, minced garlic, parsley, salt, and pepper. Stir and set aside.

4. Skewer the vegetables by alternating between red onion, zucchini, mushroom, capsicum and cherry tomato. Brush skewers with a light layer of garlic herb sauce.

5. Preheat grill to medium-high heat. Once the grill is hot, add skewers to the grill for approximately 5-8 minutes per side, or until vegetables are just softening and browning around the edges.

6. Remove from heat and enjoy!
